The 2021 Meursault Village is a masterclass in precision and resilience. Born from a vintage characterized by severe spring frosts and dramatically reduced yields, the surviving fruit achieved a remarkably classic and vibrant profile. Ente perfectly captured the essence of the 2021 growing season, delivering a wine with crystalline purity and electric tension. Vinification: Meticulously sorted and gently pressed. Fermented entirely with indigenous yeasts. The harvest is strictly timed to capture optimal tension and avoid over-ripeness.
Aging: Aged for approximately 11 to 12 months in custom designed French oak barrels of varying sizes to perfectly control oxygen exchange, followed by an additional 6 months resting in stainless steel tanks before bottling to preserve ultimate freshness.
Tasting Notes: A crystalline bouquet of green apple, white spring flowers, crushed stones, and Meyer lemon zest. The palate is electric and immensely concentrated, displaying an architectural frame of acidity that leads to a deeply resonant, saline, and completely unforced finish.
